1 can black beans drained
1 can of corn drained
1 medium red onion finely chopped
1 large green pepper chopped
3 large tomatoes chopped
6-8 ozs.Greenbrier Gourmet Vidalia Onion Creamy Cucumber Dressing
Grated cheddar cheese (optional)


Crumble cornbread in bottom of large bowl, Layer remaining ingredients (black beans, corn, red onion, green pepper,tomatoes), Add Greenbrier Gourmet Vidalia Onion Creamy Cucumber Dressing on top, Garnish with cheddar cheese (optional), Chill two hours, Stir before serving , add more Vidalia Onion Creamy Cucumber Dressing if needed.
