Cornbread Salad Recipe
1 batch Cathy's Blue Ribbon Cornbread made and set aside
1 can black beans drained
1 can of corn drained
1 medium red onion finely chopped
1 large green pepper chopped
3 large tomatoes chopped
1 eight oz. Greenbrier Gourmet Bleu Cheese Dip Mix
Grated cheddar cheese (optional)

  • Crumble cornbread in bottom of large bowl,
  • Layer remaining ingredients
  • Add Greenbrier Gourmet Bleu Cheese Dip Mix on top.
  • Garnish with cheddar cheese
  • Combine dry ingredients together.
  • Add liquids and stir just to mix.
  • Chill two hours and serve.
