2 ½ pounds Greenbrier Peaches (about 4 cups roughly chopped)(reserve the juice)
1 ½ cups sour cream
½ cup pineapple juice
½ cup orange juice
½ cup lemon juice
¼ cup dry sherry
1 cup reserved peach juice
8 mint sprigs
- Combine the peaches and sour cream in a blender and work into a puree. Add the remaining ingredients (except the mint) and blend until very smooth.
- Transfer to a bowl, cover and chill thoroughly, at least 2 hours, then ladle into chilled bowls, add the mint and serve.
